The vibrant color combination of bell pepper, red onion, and zucchini feeds your eyes before your stomach, and those irresistible, golden, caramelised chicken skin make it even better. You can serve it as a low-carb light meal, or add rice or mashed potatoes to turn it into a fuller meal.

First, we’ll whisk together a simple oil-based marinade for the meat and vegetables. I once received an email from a reader about roasted chicken leg quarters and potatoes, asking if she could omit oil when cooking meat. My reply was, “Unfortunately, you can’t.”

- While the chicken is cooking, we gonna prepare the veggies. Cut you veggies into large but uniform chunks (1.5–2 inches), add them to the bowl with the remaining seasoning oil and toss until evenly coated.

- After 25 minutes, take out the tray and transfer the chicken onto a plate. Arrange the veggies on the tray, ensuring they are in a single layer (no overlapping!). Place the chicken back on top of the veggies, then put the tray back in the oven and bake for 15 minutes.
