- Preheat the oven at 356°F (180°C) fan-forced. Roll out the pastry sheet, cut it into desired shapes (large squares, small circles), and place on a baking sheet.
- Prick your pastry with a fork.

- Brush with an egg wash (1 egg beaten with 1 tbsp water).
- Bake until puffed and golden brown, about 12-12 minutes. Set aside

- In a large cast-iron pan or skillet, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté until they begin to soften, add the minced garlic and cook for another 30-60 seconds until fragrant, being careful not to burn it. Pour in white wine, cook for about 2 minutes .
- Sprinkle the flour over the cooked vegetables. Cook for 1-2 minutes, stirring constantly. This cooks the raw taste out of the flour and form a roux.

- Slowly pour in the chicken broth while stirring continuously to prevent lumps from forming. Add the milk and continue stirring. Bring the mixture to a gentle simmer. It will begin to thicken. Add thyme, dijon mustard, salt and pepper and mix well.
- Stir in your chicken (shredded or cubed).

- Reduce the heat to low and let it simmer for 8-10 minutes, until the chicken is cooked ( or heated through if you use cooked chicken) and the sauce is creamy, then add frozen peas. If the sauce gets too thick, you can add a splash more broth . Season generously with salt and pepper to taste
- Ladle the hot chicken filling into bowls and place the baked puff pastry on top or on the side. Enjoy!
