Avocado toast is good, but this guacamole-inspired version is a total game changer! It’s a light meal that not only looks pretty and tastes good but is also easy to whip up—and it fits all the bills of what a breakfast should be: a combination of protein, fiber, healthy fat, and vitamins to fuel your body and brain for the day.

Creamy, zesty avocado spread generously layered over a piece of perfectly toasted golden crusty bread, then topped with juicy tomatoes with a drizzle of balsamic glaze. It’s so appetizing and satisfying for both the eyes and the tummy. 🥰

Avocado toast is an evergreen item on my breakfast rotation, especially in warmer weather. Most internet versions simply add sliced or mashed avocado on top of toast. I found that mashed avocado with guacamole elements just makes this simple dish taste much more sophisticated. The contrast of texturescreamy with a bit of crunch, and buttery avocado creates a luscious, multilayered mouthfeel.

You might be suspicious of what the balsamic glaze is doing here, but trust me on this. It adds a sweet-tangy finishing touch that makes every bite rich and interesting.

If you are a big avocado fan like me and haven’t tried avocado on toast this way before, I urge you to try this recipe ASAP! (You’ve been missing out a lot, baby! 🥰) It isn’t just for breakfast— it’s a treat you can snack on any time of the day.

  • Avocado: When it comes to making the perfect avocado toast, it’s crucial to use ripe but firm avocados. They are creamy, rich, nutty; soft and ideal for smashing. Always make sure the flesh is soft enough to smash easily with a fork. Too hard = no creaminess. Too mushy/brown = bitter and pasty. Slight give when pressed = perfect.
  • Red onion (Spanish onion): Finely diced red onion provides a crucial crunch and a sharp, cleansing acidity that adds a little bit of kick to it.
  • Lime: Lime juice is not only add acidity and balance the flavor; is also a powerful antioxidant slows avocado flesh from browning. This keeps your smashed avocado looking bright green for hours rather than turning brown in 15–20 minutes.
  • Tomato: Tomatoes of your choice. You can use Heirloom, Roma, cherry, or grape tomatoes. (I will list more ideal toppings that match with avocado toast down below).
  • Cilantro (coriander): Its bright, citrusy, and slightly peppery flavor. For those who aren’t fond of cilantro, chopped parsley makes a fine substitute.
  • Crusty bread: Any type of sliced crusty bread would work. I’ve tried sourdough, baguette, ciabatta. just simply cut it thick enough to hold the mixture, toast them to crispy and smear butter on it.
  • Balsamic glaze: Balsamic glaze tastes like sweetened, thickened balsamic vinegar that has lost its harsh edge. It adds sweetness and tangyness to this dish and compliments it very well. Drizzle lightly—a little goes a long way. Too much glaze will make the toast taste too sweet and overpower the avocado.

  1. Dice red onion finely, chop the cilantro and place them in a mixing bowl.
  2. Halve and pit your ripe avocados and scoop the flesh into a mixing bowl.
  1. Squeeze fresh lime juice over the avocado, then smash it with a fork until creamy but still slightly chunky (don’t over-smash it as we don’t want baby food purée). Season with a pinch of salt and black pepper.
  2. Toast your bread until golden brown and crispy on both sides, then butter it. Spread the smashed avocado mixture evenly over the warm toast. Scatter the sliced tomatoes and chopped cilantro on top. Press down very gently so the toppings adhere. Drizzle balsamic glaze on top, add your favorite toppings, and enjoy! Note: Best eaten within 1–2 hours. If you must make ahead (no more over 24 hours), press plastic wrap directly onto the surface to minimize browning.

When it comes to toppings, there are unlimited ways to make your avocado toast fun and tasty. Because avocado has a neutral flavor, that makes it a perfect canvas to create your masterpiece. Here are my favourite toppings (and please share your favorites with me by commenting below—I’d love to try them too! 😉):

Protein:

  • Sliced chicken or turkey: I usually use deli meat. It adds extra protein to your breakfast.
  • Smoked salmon: Salty, smoky, silky, and adds a luxurious mouthfeel.
  • Crispy bacon or prosciutto: Salty, crunchy and adds smoky flavor.
  • Cheese: crumbled Fetta or cotija cheese, goat cheese, and broconcini (small mozzarella balls) are my go-tos.

Eggs:

  • Fried eggs, poached eggs, boiled eggs, or scrambled eggs: An egg on top takes your avo toast to the next level.”

Seasonings:

  • Red chili flakes: Adds color contrast and a bit of kick.
  • Tajin seasoning: Offering a tangy, mildly spicy, and savory flavor profile.
  • Everything but the Bagel: I like the nutty taste and crunchy texture!

  • 2 tbsp fresh lime juice (Note2)

(Note2) Use lemon if you’re out of lime. Milder, but works in a pinch.
